Hard, granular, nutty, full flavoured cheese. It is made from raw cow’s milk and has a Golden yellow colour and has been aged 10 months.
Pair with grapes, walnuts, strawberries, dried figs and red wine, dusted on crepes.

• Shred or grate into pizzas and soups.
• Shave onto salads or into pasta dishes.
• Shred and bake for crispy Parmesan wafers.
