Plantains are a starchy fruit. Green plantains are rich in iron and can be a side, a substitute for potatos cut into chips (fries), boiled. Cut thinly they can also be a nice snack a substitute for crispy chips. Cut into one inch circles and shallow fried and flattened then quickly fried.
The ripe plantains are sweet and are served as a side – cut to about a quarter to a half inch thick long or in cicles or ovals and shallow fried.
